Here's a recipe for Karachi-style Seek Kebabs
Ingredients:
- 500 grams ground beef or lamb
- 2 medium onions, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped
- 2 tablespoons fresh coriander leaves, finely chopped
- 1 tablespoon roasted gram flour (besan)
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil (for brushing)
- Lemon wedges, onion rings, and mint leaves for serving
- In a large mixing bowl, combine the ground meat, finely chopped onions, minced garlic, grated ginger, finely chopped green chilies, fresh coriander leaves, roasted gram flour, coriander powder, cumin powder, red chili powder, garam masala powder, turmeric powder, and salt. Mix well to ensure all the ingredients are evenly incorporated into the meat.
- Once the mixture is well combined, cover it and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Preheat your grill or barbecue to medium-high heat. If using an oven, preheat it to 425°F (220°C).
- Take handfuls of the meat mixture and shape them into long cylindrical seek kabab, about 4-5 inches in length. Thread the shaped kebabs onto skewers.
- Brush the kebabs with oil to prevent sticking and to enhance the flavor and moisture of the seek kabab.
- Place the skewered kebabs on the preheated grill or barbecue, or if using an oven, place them on a baking sheet lined with parchment paper. Cook the kebabs for about 12-15 minutes, turning them occasionally, until they are evenly browned and cooked through.
- Once cooked, remove the seek kabab from the grill or oven and let them rest for a few minutes.
- Serve the Karachi Seek Kebab hot, garnished with lemon wedges, onion rings, and mint leaves. They can be enjoyed on their own as an appetizer or served in a roll or with naan bread for a complete meal.
Note: Seek Kebab are traditionally cooked on skewers over a charcoal grill, known as a tandoor. If you have access to a tandoor, you can cook them in that for an authentic experience.
