- 2 cups whole wheat flour
- Water as needed
- Salt to taste
- Oil or ghee for cooking parathas
- Sliced onions
- Sliced tomatoes
- Sliced cucumbers
- Chopped coriander leaves
- Ketchup (optional)
Prepare the chicken filling:
- Heat oil in a pan and add ginger paste and garlic paste. Sauté for a minute.
- Add the cooked and shredded chicken to the pan and mix well.
- Add red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix until the chicken is well coated with the spices.
- Cook for a few minutes until the flavors meld together. Remove from heat and set aside.
Prepare the mayo chutney:
- In a bowl, combine mayonnaise, mint leaves, coriander leaves, green chili, lemon juice, and salt. Mix well to make a creamy mayo chutney. Adjust the seasoning according to your taste. Set aside.
Prepare the parathas:
- In a mixing bowl, combine whole wheat flour, salt, and water. Knead until a smooth dough forms. Let it rest for 15-20 minutes.
- Divide the dough into small portions and roll them into balls.
- Take one dough ball and roll it into a small circle. Apply a little oil or ghee on the rolled circle.
- Fold the circle into a semi-circle, then fold it again to form a triangle shape.
- Roll out the triangle gently into a paratha, taking care not to tear it.
- Heat a tawa or griddle over medium heat and cook the paratha on both sides until golden brown. Apply oil or ghee on both sides while cooking. Repeat for the remaining dough balls.
Assemble the Chicken Mayo Chutney Paratha Roll:
- Take a paratha and spread a generous amount of the prepared mayo chutney on it.
- Place a portion of the cooked chicken filling on one side of the paratha.
- Top it with sliced onions, tomatoes, cucumbers, and chopped coriander leaves.
- Drizzle ketchup (if desired) for extra flavor.
- Roll the paratha tightly, tucking in the fillings as you go. Secure the roll with a toothpick if needed.
- Repeat the process for the remaining parathas.
